Delicious Pancake Recipes to make at home

Today is Shrove Tuesday – the perfect day to whip up a stack of your favourite pancakes and practice your pan flipping technique!

Forest Berry Pancakes

Prep Time: 25 mins 

Serves: 4 (2 pancakes each) 

  • 175g self-raising flour
  • 1 tsp baking powder
  • 1 tbsp caster sugar
  • Pinch of salt 
  • 1 egg
  • 200ml whole milk
  • Fresh strawberries, blueberries, blackberries, and raspberries
  • 2 tsp light brown sugar
  • Softened butter or oil for frying
  • Honey

How to make 

  1. Wash & dry the berry selection and mix them together in a bowl. Keep ¼ of the berry mix aside whole, while chopping the remaining ¾ berry mix into smaller pieces. 
  2. Add the flour, baking powder, caster sugar and a pinch of salt together in a mixing bowl. Crack in the egg, add the milk, then whisk until a smooth batter is formed. 
  3. Heat your frying pan and brush with either your softened butter or oil. Then, ladle an amount of the berry batter into the pan, moving the pan to spread out to make a rough 10cm circle. 
  4. After 1 minute, add a handful of the chopped berry mix to the heating pancakes, then top with a little more batter until covered. 
  5. Cook the pancake for a further 1 minute until you start to see bubbles appear on the surface, then flip the pancakes over and cook for about another 2 minutes on the other side.  
  6. Continue with this method until you’ve used up all the batter, keeping the cooked pancakes warm on a covered plate or tray until ready to serve.
  7. Serve your fruity pancakes with a handful of the remaining whole berries and a good drizzle of honey on top. 

Brie and Smoked Bacon American-Style Pancakes

Prep time: 20 mins

Serves: 5 (2 pancakes each) 

Ingredients 

  • 10 smokey bacon rashers 
  • 300g self-raising flour
  • 1 tablespoon baking powder
  • 2 eggs
  • 300ml semi-skimmed milk
  • 2 tbsp oil
  • 25g butter 
  • 150g brie cheese, sliced
  • Pinch of salt 

How to Make 

  1. Grill your bacon (or use your Air Fryer) for 5 mins until crisp, turning halfway through. Then cover and keep warm in a warming drawer. 
  2. Mix the flour, baking powder and a pinch of salt in a large bowl, then whisk in the eggs and the milk. Keep whisking until you have a smooth, thick batter.
  3. Heat a splash of the oil and a small amount of the butter in a non-stick frying pan until it starts to sizzle. Add 1 tbsp of the batter to the pan and move the pan around to spread it into a rough 10cm circle. 
  4. Add a couple of slices of the brie to the top of the heating pancake mix and then add another 1 tbsp of the pancake batter so that it covers the cheese. (If the cheese or batter starts to spread – you can push it back toward the centre using a spatula. 
  5. Cook for 2-3 mins until bubbles start to form on the surface, then flip over and cook for 2 mins more on the other side. 
  6. Serve topped with a little more of the butter and a slice or two of the crispy bacon.

Warm Cinnamon Pancakes 

Prep time: 25 mins

Serves: 4 (2 pancakes each) 

Ingredients 

  • 175g self-raising flour
  • 1 tsp baking powder
  • 1 tbsp caster sugar
  • Pinch of salt 
  • 1 egg
  • 200ml whole milk
  • 2 tsp ground cinnamon
  • 2 tsp light brown sugar
  • Softened butter or oil for frying
  • Maple syrup to serve
  • Walnuts to serve (optional) 

How to make 

  1.  Add the flour, baking powder, caster sugar and a pinch of salt together in a mixing bowl. Crack in the egg, add the milk, then whisk until a smooth batter is formed. 
  2. Remove a quarter of the batter to another smaller bowl and whisk in the ground cinnamon and light brown sugar until smooth. 
  3. Heat your frying pan and brush with either your softened butter or oil. Then, ladle a small amount of the batter into the pan, moving the pan to spread out to make a rough 10cm circle. 
  4. Next, using a spoon or ladle, layer a small amount of the cinnamon batter mix onto the top of the heating pancake mix to form a swirl. 
  5. Cook each pancake for around 2 minutes until you start to see bubbles appear on the surface, then flip the pancakes over and cook for about another 2 minutes on the other side.  
  6. Continue with this method until you’ve used up all the batter, keeping the cooked pancakes warm on a covered plate or tray until ready to serve.
  7. Serve your cinnamon pancakes with a touch of salted butter and a drizzle of maple syrup.
